Cooking with fresh vegetables and produce isn't just about recipes. It's also about seasons, traditions, and practices passed down from generation to generation. At Jean Martin, every moment of the year is punctuated by harvests, and one of the most iconic remains that of the olives from the Baux-de-Provence Valley.
Broken olives: an exceptional PDO product
The PDO broken olive, a symbol of the Baux-de-Provence Valley, is eagerly awaited each year. Its unique, subtle, and recognizable flavor makes it a true treasure of our terroir. From its hand-picking to its delicate pairing with wild fennel, each step tells a story, from its confit to the slight burst of its tender flesh.
At Jean Martin, the harvesting, confiting, and sale of these olives are much more than work: it's a highlight of the year, filled with joy, patience, and sharing. Each olive reflects the Martin family's savoir-faire and respect for Provençal traditions.
A product from the terroir, shared with you
The broken olive is much more than a product: it's a link between a territory, its family, and you, our visitors. Meetings at the shop become an opportunity to share our love for this land and the riches it offers us. Exchanges around this emblematic product are moments of conviviality and culinary discoveries.
Availability and culinary uses
A primeur product, our broken olives are sold exclusively at the shop – they cannot be shipped by mail. Their unique taste is also found throughout the year in our Green Tapenade and Anchoïade recipes, bringing the authentic flavor of the Baux Valley to your dishes. Sales begin every year on September 16th, and we look forward to welcoming you to share this gourmet and authentic moment.
