Sweet potato and onion confit waffles Jean Martin

Ingredients

For 2 people :
  • 1 jar of onion confit 140g Jean Martin
  • 1 sweet potato
  • 1 parsnip
  • 1 carrot
  • 1 potato
  • 1 slice of Chioggia beetroot
  • 1 pear
  • 1 turnip
  • 1 egg
  • 2 tablespoons of flour
  • 1/2 packet of yeast
  • Salt and pepper
  • Olive oil

Recipe

Peel the sweet potato and the potato. Steam them then mash them to make a puree.

Add the egg, flour and yeast.

Salt and pepper.

Pour the batter into the waffle iron and cook 2 waffles.

Preheat the oven to 200°C.

Peel the parsnip, carrot and turnip. Roughly cut them, place them on a plate and brush them with olive oil. Salt and pepper.
