Clafouti with eggplant riste Jean Martin

Ingredients

For 4 people:
  • 300 g of Jean Martin eggplant riste
  • 4 eggs
  • 300 ml of milk
  • 180 g of flour
  • 100 g mozzarella or other grated cheese
  • 1 handful of chopped flat-leaf parsley
  • Flower of salt
  • pepper

Recipe

Simply beat the whole eggs, then add the milk, flour, salt and pepper. You get a thick pancake batter texture.

Then add the cheese, the eggplant riste, and pour everything into a buttered mold, ideally 20 cm in diameter.

Spread a little cheese on top and a few touches of eggplant riste, then bake for 30 minutes at 180°C.
