Salmon pie and eggplant caviar Jean Martin

Ingredients

For 1 pie:
  • 1 Eggplant Caviar 380g Jean Martin
  • 6 slices of smoked salmon
  • 2 rolls of puff pastry
  • 3 eggs
  • 3 tablespoons of crème fraîche
  • 1 egg yolk to brown the dough

Recipe

Spread the first puff pastry in a pie mold. Prick it with a fork.

Mix the Eggplant Caviar with 3 beaten eggs and the crème fraîche.

Spread the mixture over the puff pastry, then cover it with the slices of smoked salmon.

Place the second dough and weld it with the one below.

Brown with the egg yolk.

Bake in a preheated oven at 180°C for 30 to 35 minutes.

To be enjoyed lukewarm.
