Recipe for Riste Salad with eggplant, anchovies and peppers

Ingredients

For 6 persons:
  • 1 jar of eggplant riste 600g
  • 1/2 fresh pepper (100g)
  • 4 spring onions (60g)
  • 6 anchovy fillets
  • Sherry vinegar

Recipe

Cut the pepper and spring onions into small cubes, and the anchovies into 3.

Mix them with the eggplant riste and add a drizzle of sherry vinegar.

Place in the refrigerator and serve very cold with a grill or plancha.
