Butternut stuffed with lentil curry Jean Martin

Ingredients

For 4 people :
  • 1 jar of lentil curry 520g Jean Martin
  • 1 butternut
  • 2 tablespoons of maple syrup
  • 6 fresh button mushrooms
  • 100g feta
  • Fresh coriander
  • Olive oil
  • Salt and pepper
  • Optional: Yellow beet

Recipe

Preheat the oven to 200°C.

Bake the butternut for 10 minutes to pre-cook it and cut it more easily.

Cut it in half and remove the seeds.

Salt and pepper.

Brush with maple syrup.

Bake again for 15 minutes.

Chop the mushrooms and mix with the Lentil Curry.

Remove the butternut from the oven, remove the flesh from the middle and add to the preparation.

Stuff the butternut with the mixture and bake for another 5 minutes.

Remove from the oven, sprinkle with feta and a few coriander leaves.

Optionally, decorate with a few slices of yellow beetroot.
