Gazpacho, soft-boiled egg and feta recipe

Ingredients

For 2 people :
  • 1 jar of Gazpacho 600g Jean Martin
  • 2 eggs
  • 150g feta
  • 1 red pepper
  • A few sprouted seeds (option)

Recipe

Place the jar of Gazpacho in the refrigerator at least 30 minutes before eating.

Cook the eggs in boiling water for 6 minutes. Run them under cold water before peeling them.

Cut the pepper into small cubes.

Arrange your gazpacho in a deep plate, add the diced peppers and place 1 egg per plate. Crumble the feta on top and sprinkle with some optional sprouted seeds.

Serve with a slice of toasted bread!
