Green gazpacho with pesto Jean Martin

Ingredients

For 4 people:
  • 1 jar of Pistou 100g Jean Martin
  • 2 zucchini
  • 2 cucumbers
  • 1/2 red onion
  • 3 sprigs of mint
  • A few basil leaves
  • 50 g of feta
  • 1 drizzle of olive oil
  • Salt and pepper
  • Edible flowers
  • Leek sprouts

Recipe

Wash and peel the vegetables.

Cut the cucumber and keep a few small cubes for decoration.

Slice the red onion and keep a few slices for decoration.

Cut the zucchini.

Place everything in the blender bowl.

Add a drizzle of olive oil and a little feta cheese. Keep a piece of feta for dressing.

Salt and pepper.

Add a few mint leaves and basil.

Add 2 tbsp. tablespoon of pesto.

Mix everything until you obtain a smooth and homogeneous texture.

Pour the mixture into bowls and decorate with a few pieces of cucumber and red onion.

Crumble a little feta.

Decorate with leek sprouts and edible flowers.
