Recipe for Jean Martin-style spring rolls

Ingredients

  • 1 Tabbouleh 630g Jean Martin, prepared at least 30 minutes before the recipe
  • 1 packet of rice paper
  • 150g chicken fillet
  • 1 sachet of fresh mint leaves

Recipe

Cook a nice chicken fillet in a pan in a little olive oil.

Cut it into pieces and reserve. Soak the rice paper by plunging it for a few seconds in lukewarm water and place it on a flat plate.

Arrange 3 or 4 fresh mint leaves in a horizontal line on the bottom of the rice paper then 3 level tablespoons of Tabbouleh on top.

Add a few pieces of cooked chicken fillet

Start rolling the rice paper on itself and fold the sides in the first turn then continue rolling tightly until you obtain a roll.

These rolls are eaten with a sauce composed of 1/3 soy sauce, 1/3 vinegar (or lemon), 1/3 olive oil.
