Organic eggplant cream quesadillas Jean Martin

Ingredients

  • 1 jar of Organic eggplant cream 110g
  • 2 wheat tortillas
  • Clotted cream
  • grated goat cheese
  • lime
  • coriander
  • Mexican spices

Recipe

On a tortilla, roughly spread 2 tbsp of Organic Eggplant Cream, 1 tbsp of thick crème fraîche, 1 handful of grated cheese, fresh coriander, ½ lime juice and Mexican spices.

Fold each of the 4 sides inwards to form a cushion.

Brown the tortilla in a pan in a drizzle of cooking oil on both sides.

Serve with a nice salad.
