Grossane black olives from the Baux-de-Provence Valley are left on the tree to wrinkle slightly until December and then set aside for ten months to remove their bitterness. They are then blended with capers, of course (tapeno in the Provençal dialect). At harvest time, the kitchen starts to smell like truffles...
